Tembleque Coconut Milk Pudding

This is a easy dessert that I had in Puerto Rico. Dairy-free
Ingredients:
3 1/2 oz can of unsweetened coconut milk
a bit less than 1/4 c sugar
a bit less than 1/4 c corn starch
Directions:
1. mix dry ingredients in small saucepan
2. gradually stir in cocunt milk (making smooth runny paste)
3. stir constantly over medium heat until it ebgins to thicken
4. reduce heat to low, bring to a aimmer approx. 1 minute
5. pour into lightly greased pan/mold
6. place saran wrap over it (touching the pudding so it doesn't create a skin )
7. refrigerate approx 5 hours
8. serve with cinnamon or cut-up tropical fruit (papaya, mango, etc)
