My best friend's mom used to make these cookies for our basketball team, she would bring a bucket full of them to our games and they would disappear in seconds. Everyone loves them.
Ingredients:
1 cup peanut butter, chunky
1 cup soft butter or margarine
1 cup white sugar
1 cup lightly-packed brown sugar
2 eggs
1 teaspoon vanilla
2 cups « quick » rolled oats
2 cups all-purpose flour
1 teaspoon baking soda
1-11/2 cups of semi-sweet chocolate chips
Directions:
1. 1) Cream together peanut butter, butter, white and brown sugar and brown sugar.
2. 2) Add eggs and vanilla , and beat until light and fluffy.
3. 3) Combine oats, flour and baking soda, and stir into peanut butter mixture.
4. 4) Add chocolate chips.
5. 5) Drop by spoonfuls onto ungreased baking sheets. Place in oven at 325-350 degrees for 10-12 minutes or until lightly brown.
6. 6) Cool on rack. Makes 4 dozen.
7. (For soft cookies, don`t overcook! And if dough is too sticky, add a handful of flour.)
