Tea - Party Mice

I took a cue from Alice in Wonderland (one of my favourite movies!) when naming this recipe, an adaptation of one that I found on Flickr. Cookie mice are decorated with licorice tails and sprinkle eyes! Perfect for the Christmas platters.
Ingredients:
1/2 cup butter, room temperature
1 cup creamy peanut butter
1/3 cup packed light brown sugar
1/2 cup white sugar
1 egg
1 tbsp vanilla extract
1/2 tsp baking soda
1/2 cup flour
1 cup whole wheat flour
60 peanuts, halved
coloured decorating quills
150g red shoestring licorice, cut into 60 pieces
Directions:
1. In a large bowl, beat together butter, peanut butter and sugars until fluffy.
2. Beat in egg, vanilla extract and baking soda until well blended.
3. Gently mix in flour just until blended.
4. Cover and chill for 1 hour, or until firm.
5. Preheat oven to 350F.
6. Shape dough into 1 balls, tapering each into a narrow oval.
7. Press flat on one (narrow) side, 2 apart on ungreased cookie sheets.
8. Decorate as mice, using peanut halves for ears and quill candies for eyes.
9. With a toothpick, make a hole about 1/2 deep in the tail ends.
10. Bake 9 minutes
11. Transfer to a cooling rack and immediately insert licorice pieces in tail-holes. I find using a bit of royal icing helps hold them in place.
