Ingredients:
12 oz pasta
3 tbsp dark sesame oil
2 tbsp peanut oil
3 cloves garlic, minced
2 tbsp brown sugar
3/4 c creamy peanut butter
3 tbsp rice vinegar
3 tbsp soy sauce
6 tbsp hot water
1/2 c chopped peanuts
1 tbsp toasted sesame seeds
2 green onions, thinly sliced on the diagonal
1 tsp chili paste (optional for heat)
Directions:
1. Cook pasta in a large pot of boiling, unsalted water over medium heat until al dente.
2. Meanwhile, in a blender, combine the peanut oil, garlic, brown sugar, peanut butter, rice vinegar, soy sauce, and hot water. Blend.
3. Drain and rinse the pasta really well with cold water. Transfer to a wide bowl; toss with the sesame oil to avoid sticking together. Allow the noodles to chill before the next step.
4. Toss the noodles with peanut sauce as well as chopped peanuts until well coated.
5. Serve at room temperature or chilled. Garnish with sesame seeds and green onions. Enjoy!
