Tava Fry Vegetables

a special blend of spices for cooking vegetable delicacies on a flat pan(tava).serve with roti and raita.
Ingredients:
150 g okra
100 g small eggplants
2 medium red onions
100 g potatoes
1/2 teaspoon coriander powder
salt
1/2 teaspoon mango powder
1/2 teaspoon cumin powder
1/2 teaspoon red chile
1/4 teaspoon black salt
1/2 teaspoon dry mustard, green powder (methi)
1/2 teaspoon garam masala
1/4 teaspoon ground nutmeg
1/4 teaspoon ground mace
1/2 teaspoon dry ginger powder
2 1/2 tablespoons oil
Directions:
1. Dress and silt all vegetables.
2. Mix all ingredient and stuff in every piece of vegetable.
3. On tava or frying pan heat oil.
4. Gently place vegetables,silt upwards and simmer on flame.
5. Turn occasionally till tender.strain and serve hot.
