Traveling through the South of France so many years ago, I came across this amazing salad dressing at almost every restaurant, I still make it today - it's light and goes with all sorts of salads. Fantastic to use over Tuna fish and as a condiment to baked fish such as salmon.
Ingredients:
1 cup olive oil
1/2 cup apple cider vinegar
2 tables finely chopped tarragon or 1 tablespoon dried
2 tablespoons honey
2 cloves garlic finely minced
1 tablespoon dijon mustard (use grainy one if you like - looks great)
2 tablespoon mayonnaise
1/2 teaspoon dry mustard
3/4 teaspoon kosher salt
1/2 teaspoon fresh ground cracked pepper
equipment needed: bowl, whisk & container with tight lid
Directions:
1. In bowl, place fresh chopped tarragon, minced garlic, honey, mustard(s), mayonnaise, salt & pepper.
2. Still till well combined.
3. Add vinegar and stir till well combined.
4. Add oil slowly in a stream while still whisking to make an emulsion.
5. Salad dressing is finished!
6. To make a lighter version , use half the oil and add water instead and mix it up in your blender.
