--Tasty Dish's-- Mega Yummy Gourmet Breakfast Quesadilla #3

I think I've found my true calling...quesadillas! A -Tasty Dish- original. *Please* note that I used this recipe: Turkey Breakfast Sausage Patties for making the sausage .
Ingredients:
grapeseed oil or olive oil, for frying
1/4 cup turkey sausage, cooked and crumbled (please read intro to recipe above)
1 egg (fried or scrambled, ok to sub tofu or cottage cheese)
2 tablespoons baby spinach, cut into thin ribbons
1 (5 inch) whole wheat tortillas or 1 (5 inch) corn tortillas
1/2 tablespoon raisins, chopped
cream cheese or plain yogurt or sour cream
Directions:
1. In a sautè pan heat a small amount of oil on medium heat and cook the ground turkey sausage meat until brown and no longer pink. Remove from pan and set aside.
2. Scramble the egg with the spinach . Set aside.
3. Add a little more oil to the pan, heat, then add the tortilla to coat with oil. Flip tortilla over.
4. Add the turkey sausage meat, scrambled egg and remaining ingredients except for the cream cheese (sour cream or yogurt). Spread out the ingredients evenly on the tortilla.
5. Fry for about 30 seconds then fold the tortilla over to make a half moon.
6. Fry for another 30 seconds to 1 minute until lightly browned on both sides.
7. Transfer quesadilla to a paper towel to drain off any excess oil and to cool.
8. Garnish with softened cream cheese (sour cream or plain yogurt), slice and serve.
9. Serving suggestion: I enjoy the quesadilla with pear slices and organic tomato juice served in my Mickey Mouse tippy cup.
