Mommy has been banishèd from the kitchen. *I'm* in charge now.
Ingredients:
olive oil or grapeseed oil, for frying
1 egg, scrambled
1 (5 inch) corn tortillas (or whole wheat or spelt tortilla)
1/4 cup small diced chicken or 1/4 cup small diced firm tofu
2 tablespoons cottage cheese
1 tablespoon pesto sauce
Directions:
1. In a sautè pan heat a small amount of oil on medium heat and scramble the egg. Set aside.
2. Add a little bit more oil to the pan, heat, then add the tortilla to coat with oil. Flip tortilla over.
3. Add the scrambled egg, chicken, cottage cheese, pesto and cilantro; spread out evenly on the tortilla.
4. Fry for about 30 seconds then fold the tortilla over to make a half moon.
5. Fry for another 30 seconds to 1 minute until lightly browned on both sides.
6. Transfer quesadilla to a paper towel to drain off any excess oil and to cool.
7. Serving suggestion: I enjoy this with cantaloupe slices and organic whole milk served in my WALL-E tippy cup.
