Tasty Cucumber Relish

What do you do with all those cucumbers left at the end of the season and are too tired to make anything that is time consuming? You make relish!! I do this all in a food processor. This is my own mixture and it changes some years depending on the garden.
Ingredients:
6 cups cucumbers, seeded and minced
2 cups carrots, minced
6 cups onions, minced
6 cups green peppers, minced
1 tablespoon pickling salt
4 1/2 cups sugar
4 cups vinegar
1 1/2 teaspoons mustard seeds
1 teaspoon celery seed
1 teaspoon turmeric
1 teaspoon ground mustard
1 tablespoon granulated garlic
1 teaspoon black pepper
pickling salt, to taste
Directions:
1. Mix together veggies and 1 tablespoon salt.
2. Let stand for 2 hours, then drain through a colander, but don't rinse.
3. Place spices, vinegar and sugar in a large stock pot (not aluminum) bring to boil.
4. Add veggies.
5. Boil for 30 minutes.
6. Adjust salt if needed.
7. Place in sterilized jars and seal immediately.
8. Process in water bath timed for your altitude for relishes.
