The ground almonds give a really wonderful taste in the batter. Feel free to use dark cherries or black raspberries in the filling. Enjoy!!
Ingredients:
crust
1 cup butter, softened
1 cup + 2 tbsp castor sugar
3 eggs
4 1/2 cups flour
method
cream butter and sugar together until smooth. add eggs one at a time followed by flour. roll the dough into balls and wrap in a cling wrap. leave to chill in the refrigerator for 2 hours before rolling enough quantity to fit in a 20cm tart pan.
filling
3/4 cup sugar, divided into two equal parts
2 eggs, separated
1 1/2 cup ground almonds
1/2 cup butter, melted
1 can pitted cherries, drained
powder sugar for dusting
apricot jam for glaze
2 tbsp chopped hazelnut
Directions:
1. Whisk half of the sugar with the egg yolks until light and fluffy. Add ground almonds and slowly stir in melted butter.
2. In another bowl whisk egg whites, adding the remainig sugar to form a stiff meringue. Quickly fold the meringue into the almond mixture.
3. Arrange cherries at the base of the prepared tart shell and fill the shell with the almond mixture. Bake at 375F for 30 to 35 minutes. Dust the center with powder sugar. Brush edges with jam and sprinkle nuts over the edge.
