Tarragon Chicken With Linguine

Ingredients:
1 lb chicken breast, boneless and skinless
6 ounces linguini noodles
1 cup chicken stock
8 mushrooms, sliced
2 carrots, julienned
1 onion, thinly sliced
1/4 cup fresh parsley, minced
1/2 teaspoon dried tarragon
Directions:
1. Cut the chicken into bite sized strips. Set aside.
2. Cook the pasta according to package directions. Drain and set aside.
3. In a large frying pan over medium heat, bring the stock to a simmer.
4. Add the chicken and cook for 7 minutes, stirring frequently.
5. Add the mushrooms, carrots, onions, parsley and tarragon. Cook until the chicken is tender, about 5 minutes.
6. Add the linguini to the pan.
7. Toss to combine. Heat until everything is heated through.
