Taquitos With Green Taquito Sauce

Tender stewed chicken, shredded and sauted with onions and tomatoes, rolled in soft corn tortillas, and fried to a golden crisp. Laddeled with a delicate warm green avocado/tamatillo sauce.
Ingredients:
1 whole chicken
1 onion peeled and cut in half
2 carrots peeled
3 cloves garlic crushed
1 whole bay leaf
1 teaspoon salt
3/4 teaspoon black pepper
water to cover
1 cup dice roma tomatoes
1 onion diced
2 pickled yellow peppers diced (optional)
1 small can diced green chile (anaheim)
1/8 teaspoon ground cumin
3/4 teaspoon garlic powder
1/2 teaspoon dried thyme
salt and pepper to taste
1/4 cup olive oil
2 dozen fresh corn tortillas
1 box of toothpicks
2 cups frying oil (canolla is great)
1 large can tomatillos
1 avocado
2 garlic cloves
1/2 fresh jalapeño pepper seeded and deviened
juice of one lime
salt and pepper to taste
2 tablespoons olive oil for frying
Directions:
1. Place fist 8 ingredients into a large stock pot and bring to a boil. Continue to boil for 5 min, cover and turn off heat, allow to sit covered for 1 hr .
2. Remove chicken from stock pot and allow to cool until it can be handled for shredding. Reserve the broth.
3. After the chicken is shredded, boned, and all skin is removed, mix with next 8 ingredients in a large bowl. Saute shredded chicken mixture in olive oil over high heat until onions are tender. Add enough broth to keep moist but not wet.
4. Microwave tortillas a few at a time in the bag 20- 30 sec to warm.This loosens the lard and makes them pliable for the next step.
5. Place about 4 tablespoons of chicken on one tortilla and roll up so it resembles a flute, hold together with a toothpick and place to the side. Continue to do this until you either run out of tortillas or chicken.
6. In a blender or food processor combine the tomatillos, avocado, garlic , lime juice and jalapeño . Blend or process until smooth and creamy, about 2 minutes.
7. Heat olive oil in pan until hot and fry blended ingredients for 5 min stirring frequently. (be very careful of the spatter, don't get burned) Saeson with salt and pepper to taste.
8. The final step is to fry the taquitos, or rolled tacos in oil heated to 375 degrees until golden and crisp. Don't be alarmed if some of them crack or fall apart a bit while frying, this is absolutely normal until you develop your own technique.
9. Serve hot with green sauce laddeld on top.
10. This may seem like a lot of work, but hey, isn't it fun?!
