The zippy citrus and raw vegetable flavors blend well together.
Ingredients:
2-1/4 cups uncooked spiral pasta
2 tablespoons lemon juice
3 plum tomatoes, sliced
1/2 cup chopped green pepper
1/2 cup sliced radishes
/12 cup chopped peeled cucumber
for dressing
1/3 cup picante v8 juice
1/4 cup orange juice
2 tablespoons lemon juice
2 tablespoons chopped green onion
1 tablespoon canola oil
1-1/2 teaspoons sugar
1 teaspoon grated lemon peel
1 teaspoon grated orange peel
1/2 teaspoon salt
1/2 teaspoon dill weed
Directions:
1. Cook pasta according to package directions, adding lemon juice to the water. Drain and cool.
2. In a large bowl, combine the pasta, tomatoes, green pepper, radishes and cucumber. In a jard with a tight-fitting lid, combine the dressing ingredients; cover and shake well. Pour over salad; toss to coat. Cover and refrigerate until serving.
