Tangy Summer Cole Slaw

This is a great slaw for folks who don't care for a mayo based mix.
Ingredients:
1 pkg (3 oz) chicken ramen noodles
3 3/4 cups coleslaw mix
1/3 cup silvered almonds
3 t. onion, chopped
1/2 cup veggie oil, or olive oil
1/3 cup apple cider vinegar
3 t. sugar
Directions:
1. In a large bowl, break noodles into small pieces. Set aside seasoning packet.
2. Add the coleslaw mix, almonds and the onions.
3. In a small bowl, combine the oil, vinegar, sugar and seasoning packet. Wisk together well.
4. Pour over coleslaw mixture and toss to coat. Serve immediately.
5. Refrigerate leftovers. 4-6 servings
6. This makes enough dressing to accomodate a whole bag of slaw mix.
