Tangy Sauteed Kale And Red Cabbage

Incredible side dish that goes great with poultry or seafood. Very tasty and very comforting. Enjoy
Ingredients:
1 thick slice bacon
1/2 head red cabbage cored and thinly sliced
1 bunch kale stemmed and sliced
1 serrano pepper sliced in half lengthwise
1 tablespoon apple cider vinegar
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
Directions:
1. Preheat a sauté pan over medium heat then add bacon to the pan and cook for 8 minutes.
2. Remove from pan and drain on paper towels.
3. Once bacon has cooled crumble or cut into small pieces and set aside.
4. Add sliced kale to the pan with the rendered bacon fat and sauté over medium heat for 4 minutes stirring frequently.
5. Add sliced cabbage and Serrano pepper halves to the pan.
6. Sauté kale and cabbage for another 5 minutes stirring frequently until cabbage has started to wilt but is still crisp.
7. Deglaze pan with apple cider vinegar making sure to scrape up any bits the may be on the bottom of the pan.
8. Once the vinegar has cooked away season veggies with salt and pepper.
9. Remove Serrano pepper halves before serving.
