Tangy Cucumber Salad

Ingredients:

  • 1/2 cup white sugar
  • 1/2 cup cider vinegar
  • 1/2 tsp black pepper
  • 1 pinch salt
  • 1/2 cup water
  • 3 large cucumbers

Directions:

  1. Mix first 4 ingredients in water until sugar dissolves.
  2. Peel and slice cucumbers into almost paper thin slices.
  3. In a stainless steel or ceramic bowl, salt cucumber slices well and let stand for 30 minutes. This will allow the cucumbers to release some of their liquid and results in less bitter cucumbers. Rinse and drain well.
  4. Put cucumber slices into glass bowl or jar.
  5. Pour sugar/vinegar mixture over cucumber slices.
  6. Let cucumbers marinate in jar for at least 24 hours.
  7. Can add more sugar to your tastes.
  8. This is really good with onion slices added too.
