Tangy Chicken Couscous Salad

This light and tasty chicken couscous salad is perfect for summer. And it's quick to make, giving you more time to enjoy the sunshine!
Ingredients:
10 ounces couscous
6 tablespoons worcestershire sauce
1 zucchini, finely diced
1 red pepper, cored and finely diced
4 scallions, finely chopped
5 ounces dried apricots, finely diced (optional)
2 tomatoes, finely chopped
4 chicken breasts, cooked and cut into strips
Directions:
1. Place the couscous in a large bowl and pour over the Worcestershire sauce.
2. Add 1 1/4 cups of boiling water from the kettle, mix well, then add the remaining ingredients except the chicken.
3. Cover the mixture and leave in a cool place for at least 15 minutes.
4. Stir in the cooked chicken and serve.
