A colourful and tangy salad to enjoy this summer
Ingredients:
vinaigrette
1/4 cup orange juice
1 tbsp orange zest
2 tbsp olive oil
1 tsp honey
1 tbsp balsamic vinegar
salt and pepper to taste
salad
2 cups cooked, sliced & cooled beets
1 small red onion, thinly sliced
1/2 cup crumbled feta
1 tbsp dillweed, chopped
1/3 cup chopped walnut pieces
Directions:
1. Combine all of the VINAIGRETTE ingredients and refrigerate.
2. Meanwhile combine all of the SALAD ingredients with the exception of the walnuts.
3. Toss dressing & salad just before serving.
4. Top with walnuts.
