This recipe is from The Vegetarian Low-Carb Diet Book by Rose Elliott. This is good for Phases 1, 2 or 3. This is quick, spicy and delicious.Serve with some spinach or watercress and slices of tomato.
Ingredients:
1 (9 ounce) package firm tofu, drained
1 garlic clove, peeled and crushed
1 teaspoon crushed ginger
1 pinch hot paprika or 1 pinch chili powder
1/2 teaspoon ground turmeric
2 teaspoons ground cumin
1 tablespoon olive oil
1 tablespoon lemon juice
1 pinch salt, to taste
1 tablespoon roughly chopped fresh coriander
Directions:
1. Cut the tofu into 1/2 inch cubes.
2. Preheat the broiler.
3. To make the spice mixture, put all the ingredients into a bowl and mix together.
4. Toss the cubes of tofu in the spice mixture and stir so that they all get coated. If you have time, you could leave the tofu to marinate in the spice mixture for a few hours but this is not essential.
5. Spread the cubes of tofu out on a grill pan or on a baking sheet and broil 10-15 minutes, until sizzling and crisp, turning that a couple of times.
6. Serve hot and sizzling from the broiler, sprinkled with the fresh coriander.
