WITHOUT THE SAUSAGE OR SHRIMP THIS IS A SIDE DISH, IF U COOK WITH, WE SERVE IT AS A MAIN DISH. THIS IS A FAVORITE HERE IN LOUISIANA WHERE I LIVE. (THE CENTRAL PART OF THE STATE). ENJOY!
Ingredients:
6-9 bacon slices
1 small yellow onion (i use vidialia onions)
1 cup chopped green onion (top & bottom)
parsley
1 (12 oz) can of tomato paste
1 can of diced petite tomatoes drained
3 1/2 cups chicken broth
3 tsp sugar
1/2 teaspoon cayenne pepper (less or more depending on where u live, ha!)
salt
pepper
2 cups rice ( i use zatarains rice, its not mushy and doesnt stick. zatarians rice is the pride of louisiana).
you can also add fresh shrimp, cajun style or smoked sausage to this recipe. if u do so, add 1/2 pkg sausage (sliced) or 1 -1 1/2 lbs of shrimp.. my friend sometimes adds white meat chicken to hers as well..
Directions:
1. COOK BACON OVER MEDIUM HEAT UNTIL CRISP. REMOVE BACON AND CRUMBLE.
2. SAUTE CHOPPED ONIONS IN BACON DRIPPINGS OVER MED HEAT.
3. ADD TOMATO PASTE AND DICED TOMATOES, STIRRING UNTIL SMOOTH.
4. GRADUALLY ADD CHICKEN BROTH, STILL IN SUGAR, SALT, PEPPER AND PARSLEY.
5. BRING TO A BOIL, REDUCE AND SIMMER, STIRRING OCCASIONALLY FOR ABOUT 10 MINUTES.
6. COMBINE MIXTURE WITH UNCOOKED RICE AND CRUMBLED BACON AND PLACE IN A RICE STEAMER OR COOK ON YOUR STOVE TOP.
7. COOK UNTIL DONE. MAKE SURE U STIR ABOUT EVERY 15 MINUTES WHILE THIS IS COOKING.
8. IF U COOK IN A STEAMER IT TAKES ABOUT AN HOUR, ON TOP OF THE STOVE TAKES ALOT LESS TIME. JUST MAKE SURE TO COMBINE YOUR MIXTURE WITH UNCOOKED RICE, THEN COOK..
9. *COOK 2 CUPS OF RICE WITH 4 - 4 1/2 CUPS WATER*
