This is not an authentic Mexican recipe; it's just something I concocted one evening when I was in the mood for something different. It turned out so well that I immediately wrote down exactly what I'd put into it. I like it spicy, but if you don't, decrease the amount of chili powder, dried peppers, and tabasco.
Ingredients:
2 cups bisquick
3/4 cup water
2 lbs ground beef
1 onion, chopped
1/2 cup salsa
2 cups tomato juice
2 tablespoons chili powder
salt
1 pinch dried hot pepper
10 drops tabasco sauce
1 green pepper, chopped
1 tomato, chopped
1/4 cup sliced black olives
6 flour tortillas, made into crumbs in food processor
1/4 cup melted butter
2 cups shredded medium cheddar
Directions:
1. Brown ground beef and onion.
2. Drain.
3. Add salsa, tomato juice, chili powder, salt, dried peppers, and tabasco sauce.
4. Boil until liquid is reduced.
5. Remove from heat.
6. Add green pepper, tomato, and olives.
7. Mix Bisquick and water in 13 x 9 baking pan.
8. Spread evenly over bottom of pan.
9. Top with beef mixture.
10. Mix ground tortillas, butter, and cheese.
11. Sprinkle on top of beef mixture.
12. Bake at 400 F for 30 minutes.
13. Serve with dollops of sour cream.
