  1. Preheat oven to 350. Slice the sweet potato into strips (like for French fries).
  2. Shake the potato strips in a plastic bag with the oil to coat them evenly.
  3. Transfer fries to a greased cookie sheet. Dust heavily with pepper and bake 30 minutes or until done.
