Ever since I first found this easy, quick, delicious little cookie recipe, it's been a huge hit with family and friends, and a must at tailgates. They are so easy to make, it's hard to even call it a recipe! But once you try them, I would bet you won't want to stop. Read more ...
Ingredients:
cookies
1 package moist supreme dark chocolate cake mix
1/2 cup melted butter
1 egg, slightly beaten
filling
1 can whipped fluffy white frosting (it must be the whipped fluffy kind)
top cookie chocolate frosting
3 cups powdered sugar
6 tablespoons melted butter
1/3 cup or more of cocoa (depending on how chocolate-y you like it)
1 teaspoon vanilla extract
about 4 tablespoons half-and-half, to make it spreadable
Directions:
1. Beat egg, by hand, in a large bowl.
2. Stir in cake mix and melted butter (batter will be very stiff)
3. Roll into 1 balls and place on ungreased cookie sheet; flatten each ball with your fingertips
4. QUICK TIP: I have found that I can make these balls in no time if I pack the batter into a 1 1/8” diameter melon baller to form flat bottomed balls; hit melon baller on counter to release dough, place ball on cookie sheet and flatten with bottom of water glass...so fast!
5. Bake at 350 degrees for 6 to 8 minutes...do not overbake - you want them barely crispy around the edges but soft and gooey in the center.
6. Cool cookies completely, then match them up in pairs before starting the filling and frosting process.
7. When cookies are all paired up, FROST THE BOTTOM of a cookie with about a tablespoon of whipped frosting (be sure to use the whipped frosting, so the filling is fluffy and light).
8. FROST THE TOP of the second cookie with the chocolate frosting, then sandwich them together, with the white fluffy filling in the middle.
9. Lay them on some waxed paper to allow the frosting to set up.
10. Continue until all cookies are frosted and “sandwiched” together.
11. For the chocolate frosting, mix all ingredients together with a mixer.
12. Add enough half-and-half to make the frosting easily spreadable. The creamy-ness of this frosting comes from the half-and-half, so water or milk won't make it as creamy. If you can manage it, don't substitute!
