Tailgate Potato Salad

Hearty main course salad that we love to serve at halftime.
Ingredients:
3 lbs. new potatoes boiled, quartered, unpeeled
1 pound of polish kielbasa, sliced diagonally
1/4 cup of chopped drained capers
1/2 cup of julienned pimentos
1 cucumber, peeled and thinly sliced
1 bunch of scallions, sliced on the diagonal, use some of the green part
1 egg plus 1 egg yolk
1 teaspoon of dry mustard
1 teaspoon of freshly squeezed lemon juice
1/4 teaspoon of red wine vinegar
2 dashes of favorite hot sauce
1/2 cup of olive oil
1 cup of light salad oil
2 tablespoons of dijon mustard
salt and pepper (fresh ground black pepper, if you please)
Directions:
1. Put the potatoes, kielbasa, capers, pimentos, cucumbers and scallions in a large bowl.
2. In a blender or food processor, add the egg and egg yolk, dry mustard, lemon juice, hot sauce and vinegar.
3. Process 10 seconds.
4. Add oil very slowly in a steady stream (making mayo here).
5. Fold in dijon mustard and adjust the salt and pepper level to taste.
6. Pur over the salad ingredients and toss very well.
