Tahini Salad From The Middle East - Salata Tahini

This side salad goes well with chicken, lamb or falafel either on it's own or in a pita. It is very flavourful.
Ingredients:
2 tomatoes, seeded and cut into small chunk sized pieces
2 cucumbers, seeded and cut into small chunk sized pieces
2 garlic cloves, minced
1 cup tahini
1 lemon, juiced
note: please do not use anything other than a real lemon.
1/2 - 1 cup water
1 teaspoon mint, chopped
olive oil (to garnish)
salt to taste and if necessary
note: you may need to adjust the amount of tahini and water to your personal desired consistency. consistency should be creamy.
Directions:
1. Dice tomatoes and cucumbers and combine them together in a medium sized bowl.
2. Add minced garlic.
3. Mix tahini dressing in a seperate bowl with water.
4. Add lemon in intervals until it reaches a desired tartness.
5. Stir the dressing until smooth and creamy.
6. Gently blend everything together.
7. Place in the refridgerator for at least 30 minutes to enhance the flavours.
8. Serve with a swirl of olive oil on top.
9. If you want to spice this recipe up, you can add finely chopped jalapeno peppers or a dash of Tobasco sauce.
