Tahini and Caraway Roast

A hearty tasty loaf, the perfect alternative for vegetarians at barbecues, picnics and homemade dinners. Adding courgettes, peppers and other vegetables works very well as well as nuts, seeds and even dried fruits!! I would recommend cooking them in individual portions in a muffin tin but a loaf may work as well.
Ingredients:
1 teaspoon caraway seed
1 onion, chopped
3 garlic cloves, chopped
450 g carrots, cooked and mashed
100 g ground sunflower seeds
125 g ground pumpkin seeds
100 g rolled oats, soaked and drained
chili, deseeded to taste (optional)
1 lemon, juice of
65 ml water
1 tablespoon tahini
salt and pepper
Directions:
1. cook onion and garlic in a little water until soft.
2. add 1/2 tsp of tamari and mix all ingredients together. add salt and pepper to taste.
3. grease muffin tines and spoon in the mixture. cover with baking paper and bake for 1 hour in the oven. uncover and bake for 10-15mins to brown the top.
