Tagliatelle of Zucchini

A light, summery oven dish.
Ingredients:
2 zucchini
3 small ripe tomatoes
130 g fresh lowfat mozzarella cheese
50 g parmesan cheese, grated
Directions:
1. Remove the ends from the zucchini and cut length-wise into three. Slice each into tagliatelle. Blanche 1-2 mins; drain.
2. Slice the tomatoes and the mozarella.
3. Put the zucchini in a baking dish. Top with tomato and mozarella slices, parmesan cheese, salt and pepper to taste. Put under a pre-heated grill until golden brown.
