Ingredients:
2 teaspoons vegetable oil
1 onion, chopped
3 garlic cloves, minced
1 lb extra lean ground beef or 1 lb lean ground beef
3/4 teaspoon allspice
3/4 teaspoon cinnamon
1 cup brown rice
2 cups sodium-reduced chicken broth
1 sweet red pepper, diced
1 yellow pepper, diced
1 cup dried fruit (apricots, currants and cranberries)
3 tablespoons minced fresh mint
2 tablespoons fresh lemon juice
1/2 cup raw sunflower seeds
Directions:
1. In a large heavy saucepan or Dutch oven, heat oil over medium heat. Add onion and garlic; cook until aromatic, about 1 minute.
2. Add beef; cook, breaking up with wooden spoon, until browned, about 5 minutes.
3. Drain, if desired. Stir in allspice, cinnamon, rice and chicken broth; bring to a boil. Cover and simmer until liquid is absorbed and rice is tender, about 40 minutes. Remove from heat.
4. Stir in sweeet peppers, dried fruit, mint and lemon juice. Top each serving with sunflower seeds.
