From the Weekend magazine, this is an Iftar special.
Ingredients:
50 g grilled hamour fish
50 g tahini paste
40 g onions
5 g garlic
20 ml lemon juice
10 ml orange juice
2 g salt
1 g cumin seed
1 g white pepper
20 g oil
2 g pine nuts
100 ml cold water
20 ml olive oil
Directions:
1. Mix the tahina paste with cold water in a bowl.
2. Add salt, cumin seeds, lemon juice, orange juice, pepper and salt.
3. Mix well and keep aside.
4. Heat oil in a skillet.
5. Add garlic and 20gms of onion.
6. Stir-fry until brown.
7. Add the tahina mix and keep boiling on low flame until well cooked.
8. Allow to cool.
9. When it cools, arrange the grilled fish on the mix and top it with fried onions and pine nuts.
10. Serve hot.
