I got this recipe from my sister-in-law when she made it for a large family gathering. It's great when you are expecting guests from out of town, because it can cook on the stove for as long as you are waiting for your guests to arrive.
Ingredients:
1 pound ground beef
1 can diced tomatoes
1 can rotel tomatoes (we use mild but you can use whichever kind you like)
1 can corn
1 can beans (i use pinto beans or ranch style beans, but again use whatever you like)
1 pkg taco seasoning
1 pkg ranch dressing mix
Directions:
1. Brown beef and drain fat. Add remaining ingredients (and a little water if needed to thin to soup consistency) and simmer for at least 30 minutes but longer is even better.
2. Easy to multiply to whatever quantity you like! Serve over tortilla chips, rice, macaroni, or make it thicker to eat in tortillas.
