I use a variation of a recipe I stole. (Sue me. LOL) This is great for a quick put-together on a cold winter night. You can make it as spicy as you like or not at all.
Ingredients:
2 pounds ground beef
1 medium, chopped yellow onion
2 cans whole kernel corn
2 cans diced tomatoes
1 can black beans
1 can pinto beans
1 cup green chiles (or jalapena's if you want the kick)
1 package ranch dressing mix
1 package taco seasoning
1 cup grated cheddar cheese
1 medium avocado, peeled and sliced
1 package tortilla chips
Directions:
1. Brown the ground beef and chopped onion together and drain.
2. Add the corn, tomatoes, black beans, pinto beans, and chiles, and ranch dressing (including the juices from each). Stir well.
3. Simmer for 30 minutes. Top with the avocado slices and grated cheese, serve with tortilla chips.
