Mary York ~ ~ ~ what more can I say? In this one she uses only iceberg lettuce. The more I think back on those tailgates, the more I miss them! Thankfully I don't need to miss this food. We had a soup & salad party one year and this salad was the first to go! Read more !
Ingredients:
1 head iceberg lettuce, torn
1 can cold pinto beans, rinsed and dried
2 medium tomatoes, chopped and drained
1 small red onion, chopped
1 can small ripe olives
8 ounces cheddar, shredded
1 small bag taco chips, crushed/broken, to taste
1 small bottle kraft catalina dressing, to taste
Directions:
1. Combine all salad ingredients EXCEPT taco chips and dressing in a serving bowl.
2. Immediately before serving toss with the chips and dressing, to taste.
