quick.. easy.. especially when you have left over taco fixings and shells. very hearty, too.something i threw together on a day i couldn't figure out what to make for dinner. can be made spicy or mild depending upon taste. can be made ahead and frozen, but thaw completely before baking. this is a favorite with my boys.
Ingredients:
2 lbs ground beef
2 (1 1/4 ounce) packages taco seasoning
1 (16 ounce) can refried beans
1 (14 1/2 ounce) can diced tomatoes
1 (10 ounce) package flour soft taco-size flour tortillas
1 (4 ounce) package corn, taco shells. cooked and crushed
1 (24 ounce) jar mild salsa
3 cups frozen corn kernels
4 cups shredded monterey jack cheese
1 cup chopped green onion (optional)
1/4 cup chopped banana pepper (optional)
sour cream
Directions:
1. preheat oven to 350.
2. brown ground beef and drain, add taco seasonings as you would for tacos, but omit the water.
3. once mixed, add diced tomatoes, and refried beans. mix well.
4. in a 13x9 inch pan, spread about 1 to 2 cups beef mixture in the bottom of the pan, layer 1/4 jar of salsa,1 cup cheese, 1 cup corn, 1/3 the onions, 1/4 the peppers and 1/4 of the crushed taco shells. place 2 and 1/2 flour tortillas on top.
5. start layering again starting with the beef mixture. making 2 more layers ending in flour tortillas.
6. on the final layer spread salsa, crushed corn shells, peppers and cheese.
7. place on cookie sheet and bake in the oven at 350 for about 20 min until the cheese has melted and it's bubbly.
8. slice and serve with sour cream and salsa.
