Back in the 70’s and 80’s I used to go to Taco Bell just to get an Enchirito. Taco Bells once popular burrito/enchilada hybrid product. I haven’t had one since they vanished in the early 90's. I just ran across this recipe on a copycat recipe site and am excited to find out if they are as good as I remember or if I simply had no taste in my younger years. Read more . Of course I will cheat and add more olive slices.
Ingredients:
1 lb ground beef
1/4 c. all-purpose flour
1 t. chili powder
1 tsp salt
1/2 tsp dried minced onion
1/2 tsp paprika
1/4 tsp onion powder
dash garlic powder
1/2 c. water
1 30-oz can refried beans
1 pkg large flour tortillas
1/4 onion, diced
1 10 oz can la victoria enchilada sauce
2 1/2 c. shredded cheddar cheese
1 2 oz can sliced black olives
Directions:
1. Brown ground beef in skillet over med heat, using a wooden spoon or spatula to separate the beef into pea-size pieces. Drain fat.
2. Add flour, chili powder, salt, dried minced onion, paprika, onion powder, garlic powder, and water.
3. Heat refried beans in sauce pan over med heat’
4. Warm tortillas in a steamer, or wrap in a moist towel and microwave for 1 min on high. You may also heat up tortillas individually by placing them in a hot pan over med heat for about 15 seconds per side.
5. Spoon about 3 T. of beef into center of each tortilla. Sprinkle on 1/2 tsp of diced fresh onion. Add 1/3 C. of hot refried beans.
6. Fold tortilla over beans and meat and flip the tortilla over onto a plate.
7. Spoon 3 T. of enchilada sauce over the top of tortilla, then sprinkle on 1/4 C. of shredded cheese.
8. Heat for 20-30 seconds in the microwave, until cheese begins to melt.
9. Top with three olive slices.
