Fresh, Light, healthy yummy tasty. This is my go to salad. I always have some in my fridge or the grocery’s to make it. This goes together in minutes if u have a food processor. I love to add crumbled feta on top when I serve. Ps this is a great base to start, make it to suit your taste..Very versatile salad..Enjoy (this can be made easily 1/2)
Ingredients:
2 bunches fresh italian parsley, finely chopped
1 small red onion, finely chopped
10 cherry tomatoes, chopped in 1/2
3 lemons, juice of (freshly squeeze)
5 tablespoons olive oil (optional)
1 cup couscous
1 1/2 cups chicken or 1 1/2 cups vegetable stock
1 garlic clove, crushed (more or less to taste)
Directions:
1. Boil stock add couscous take off heat and cover set aside to cool.
2. Put everything in a bowl and add cooked couscous once cooled.
3. Eat and/or refrigerate. (I think its better next day).
