Ingredients:
2 cups bulgur wheat
1 cup fresh parsley, finely snipped
1/3 cup lemon juice
1/2 cup olive oil
1/2 cup green onion, sliced
2 teaspoons mint, snipped
2 tomatoes, chopped
lettuce leaf
Directions:
1. Soak bulgar wheat in 2 cups hot water, lemon juice and oil for one hour. Stir in everything else, except the lettuce. Chill. Serve on lettuce-lined salad plates.
