This is one of my favorite summer dish. I make a lot and take it to work for lunch. You can change the quantities of the vegetables and inovate!
Ingredients:
150 g couscous (uncooked)
1 kg tomatoes
3 onions
2 cucumbers
1 handfull of mint leaves
juice of 3 lemons
salt
optional: raisins
Directions:
1. Cut the vegetables in small cubes and add salt.
2. Mince the mint.
3. In a large bowl put everything and mix (do not cook the couscous!)
4. Cover and fridge for 12 hours.
5. Enjoy!
