I love Tabbouleh.....it keeps forever, it does not wilt. It is great at lunch and is refreshing to eat!
Ingredients:
1 cup of bulgar wheat
1 cup of boiling water
2 bunches of parsley, curly is best, actually
1 bunch of fresh mint
1 large zucchini, scrubbed, and diced
6 green onions, washed sliced on the diagonal
1/3 cup of crumbled feta
1 and only 1 tbsp of good olive oil
1/2 tsp of sea salt
several grinds of black pepper
2 lemons, squeezed
1 tbsp of chia seeds
Directions:
1. Soak the bulgar in boiling water for 20 minutes. Cover bowl with plastic wrap to assist in the soaking process.
2. chop the parsley, remove stems
3. chop mint
4. Mix all ingredients together.
5. Dress with lemon juice, oil, salt and pepper.
6. Refrigerate and enjoy.
7. It will keep a week!
