I wind up having to make a triple recipe and my older son will almost fight people for more. I reeeeaaaalllyy like a lot of lemon juice (and salt) but you can start out with less and add to taste. Kind of a salad, I guess.
Ingredients:
2 bunches fresh parsley (or 1 huge bunch), about 1 1/2 cup chopped, minus the stems
2 tablespoons fresh chopped mint (or more!)
(1 small onion, minced- optional but my guys don't like it in)
3 to 6 medium diced fresh tomatoes
1/2 to 1 tsp salt (to taste- add more at end if needed)
1/2 tsp black pepper
1/2 cup cooked bulgur wheat, cooled or cooked couscous, cooled
6 tablespoons lemon juice- you might want to try less but we really like it lemony
3 tablespoons olive oil
Directions:
1. Cut stems off parsley and coarsely chop, throw into big bowl with rest of ingredients and let rest an hour, if you can wait. Taste and adjust if needed. Nice appetizer for Kefta and Tzatziki sauce
