Wholesome salad to make ahead.
Ingredients:
1 cup quinoa or bulgar wheat (prepared)
6 roma tomatoes
3 celery stalks
2 cups parsley
4 green onions or chives
2 english cucumbers (salt and let stand then rinse)
1/4 cup cilantro chopped
1 clove garlic
2 tbsp fresh mint
1/3 cup olive oil
1/3 cup lemon juice or lime
1 tbsp oregano
Directions:
1. Pour boiling water over bulgar wheat or prepare Quinoa by boiling 10 minutes and draining in sieve. In separate dish add garlic, mint, lime juice and oregano to oil and let stand Chop vegetables fine then add to grain. Pour olive oil mixture over all and toss. Can be stored for 10 days or so.
