Ingredients:
4 cups fresh parsley
1/4 cup fresh mint
2 cups cucumbers, diced and seeded
2 cups tomatoes, diced and seeded
1 cup bulgur, uncooked
3/4 cup onion, diced
1/3 cup lemon juice
2 tablespoons olive oil
1/2 teaspoon salt
1 clove garlic, minced
Directions:
1. Place parsley and mint in a food processor; process until finely minced.
2. Combine parsley mixture, cucumber, and remaining ingredients in a large bowl; toss well.
3. Cover and marinate in refrigerator at least 4 hours.
