Szechuan Chicken Salad

A quick dinner for when you've had a long day of errands or working... Good around the Holidays when you dont want to overeat!!!
Ingredients:
5 cups cooked chicken breasts, torn into large shreds
1 tablespoon hot chinese mustard
2 tablespoons toasted sesame seeds
4 ribs celery, cut in diagonal pieces
6 green onions, cut in diagonal pieces
1 bunch cilantro or chinese parsley, chopped
3 tablespoons soy sauce
3 tablespoons canola oil
1/2 teaspoon ginger
1 tablespoon sesame oil
pinch of sugar
4 cups shredded lettuce (or your favorite greens)
Directions:
1. Combine chicken with hot mustardd and stir to coat.
2. Meanwhile toast sesame seed; sprinkle seed in shallow, sided pan and bake in a preheated 350 oven for 5 to 8 minutes until golden.
3. Add seed, celery, green onions and cilantro to chicken.
4. Mix soy sauce with oils, ginger and sugar and add to chicken mixture.
5. Toss together.
6. Sprinkle shredded lettuce on a large platter and mound chicken
7. on the top .
8. Garnish with a sprig of parsley or cilantro and a few toasted seed.
