Swiss Steak (South Beach Friendly)

This is an easy dish to prepare and works for any level of the South Beach Diet.
Ingredients:
2 lean sirloin steaks
1 tablespoon olive oil
2 celery ribs, diced
14 1/2 ounces diced tomatoes with basil and oregano
Directions:
1. Saute steaks on medium high with the olive oil in an oven proof skillet until browned on both sides, remove from heat.
2. Add diced celery and diced tomatoes.
3. Cover and bake at 350 degrees F for 30-45 minutes. (Depending on the size of your meat.) Check after 20 minutes, you might want to leave the lid off at this point if you like a thicker sauce.
4. If you're on phase two of the south beach diet serve with whole wheat egg noodles.
