Swiss Steak for Two

Wonderful with garlic mashed potatoes. If one serving only required, freeze the remaining half.
Ingredients:
1/2 lb round steak
2 tablespoons flour
1 teaspoon oregano (optional)
salt and pepper
1 tablespoon oil
1 small onion, sliced
1 cup carrot
1/2 cup celery (with leaves)
1/4 cup green bell pepper
1 cup tomato sauce
salt and pepper
Directions:
1. Mix flour with oregano and salt and pepper.
2. Pound into meat.
3. Heat oil in a frypan over medium high heat and brown meat.
4. Remove to baking dish and top with veggies, tomato sauce, salt and pepper.
5. Cover and bake in a 350°F oven for 1 hour until meat is tender.
