Chicken breasts simmered in broth and white wine then smothered in mushrooms and swiss cheese
Ingredients:
16 oz skinless chicken breasts
8 oz portabella mushrooms
8 oz chicken broth
4 oz white wine
4 oz swiss cheese
Directions:
1. Salt and pepper chicken breasts
2. Spray non-stick spray on saute pan or frying pan and sear both sides of breasts on medium heat
3. Add chicken broth, white wine and mushrooms.
4. Cover and simmer 20 minutes until chicken is done
5. Place chicken on plate or platter, top with mushrooms
6. Place 1 oz slice of swiis cheese, preferably aged swiss on top of each breast
7. Place plate or platter in microwave and melt cheese.
8. I serve this on top of a bed of brown rice.
