These little gems are just that...little gems that glisten , especially the ones left for Santa when the tree lights reflect on the sugar crystals.
Ingredients:
chill time of 1-2 hrs not included in prep time
1 cup butter
1 cup sugar
1/2 teaspoon baking powder
1 egg
1 teaspoon vanilla
1/2 teaspoon peppermint extract
2 cups all-purpose flour
10 drops red food coloring
10 drops green food coloring
sugar
Directions:
1. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds.
2. Add the 1 cup sugar and the baking powder.
3. Beat until fluffy.
4. Beat in egg, vanilla, and peppermint.
5. Beat in as much of the flour as you can with the mixer.
6. Stir in remaining flour.
7. Divide dough into 3 equal portions.
8. Stir red food coloring into 1 portion, stir green food coloring into a second portion, and leave third portion plain.
9. Cover each portion with foil or plastic wrap and chill in the refrigerator about 1 hour or until easy to handle.
10. Divide each color of dough into 4 equal portions.
11. On a lightly floured surface, roll each portion into a 1/2-inch-diameter rope.
12. Place a red, a green, and a plain rope side by side.
13. Twist together. Repeat with remaining ropes.
14. Chill twisted ropes for 20 minutes.
15. Cut ropes into 1/2-inch-thick slices for larger cookies or 1/4-inch-thick slices for smaller ones. Carefully roll into balls, blending colors as little as possible.
16. Place balls about 2 inch apart on ungreased cookie sheets.
17. Using a glass dipped in sugar, flatten each ball to 1/4-inch thickness.
18. Bake cookies in a 375 degree F oven until edges are set (allow 8 to 10 minutes for larger cookies or 6 to 8 minutes for smaller ones). Transfer cookies to wire racks; cool.
19. Makes about 72 large (2-1/2-inch) cookies or 144 small (1-1/4-inch) cookies.
