This recipe makes great little cupcake-sized cheesecakes—perfect for a party or family get-together. And they are quicker and easier than a cheesecake. Ingredients:
24 vanilla wafers
2 eight-ounce packages of cream cheese
1 1/4 cups granulated sugar
3 large eggs
1/4 cup all-purpose flour
1/4 teaspoon almond extract (optional)
1 teaspoon vanilla extract
1 cup sour cream
2 tablespoons sugar
1 teaspoon vanilla extract
1 can cherry pie filling
Directions:
1. Preheat the oven to 325 degrees.
2. 1. Line 24 muffin cups with foil and paper baking cups. Add a vanilla wafer to each cup.
3. 2. Beat the cream cheese and sugar together in a large bowl. And the eggs, flour, and extracts and beat until combined. Spoon the filling onto the wafer in the cups.
4. 3. Bake for 17 minutes or until just set.
5. 4. Mix the sour cream, 2 tablespoons sugar, and vanilla together in a small bowl until the sugar dissolves. Put a spoonful of this topping on each cheesecake. Top with cherry pie filling
