This delicious bread recipe reminds me of my dear Mother-in-Law. It's a must try. This recipe makes 3 loaves and freezes very well.
Ingredients:
8 cups bread flour
5 eggs, large
1/4 lb. butter
1 cup milk
1 tsp. salt
1 cup sugar
3 pkgs. dry yeast
1 teaspoon vanilla extract
note: sometimes i like to add raisins that have been soaked in a small amount of boiling water and a big splash of rye. really adds to the flavour ;-)
Directions:
1. Dissolve yeast in 4 Tablespoons warm water and 1 teaspoon sugar.
2. Melt butter in scalded milk.
3. Add sugar, salt and vanilla.
4. Stir until dissolved.
5. Beat eggs until foamy.
6. Stir into cool milk mixture.
7. Add yeast.
8. Sift flour into milk mixture.
9. Knead for 10 minutes.
10. Let rise.
11. Punch down and let rise again.
12. Punch down and form into 2 regular size loaves and 1 small loaf.
13. Let rise.
14. Beat 1 large egg and 1 Tablespoon water together. When breads are 1/2 risen brush with egg mixture then spread the streusel on top.
15. STREUSEL TOPPING:
16. 1/4 cup sugar
17. 1/4 cup brown sugar
18. 1/3 cup flour
19. 1/4 cup butter
20. Almond extract to taste
21. Combine ingredients.
22. Bake bread on center rack of oven at 350 degrees for 28-30 minutes. (The loaves continue to rise when baking)
23. ***Use 3 regular sized loaf pans when making.
