I have no idea why these are called Swedish Pecans - my mother began making these sweet treats many years ago. I like to make several batches during the holidays to wrap up in pretty containers and give as gifts. Read more . They are addictive little bites!
Ingredients:
1 pound good quality, large pecans
2 stiffly beaten egg whites
1 cup sugar
dash of salt
1/2 cup butter
Directions:
1. Spread pecans out on a large cookie sheet and toast them at 350 degrees until browned just a bit.
2. Remove pan from oven and cool nuts completely.
3. Reduce oven temperature to 325 degrees.
4. Beat egg whites until stiff peaks form.
5. Slowly add sugar and salt, and beat just to blend.
6. Add cooled nuts and stir gently until all are coated.
7. Place butter on a heavy duty cookie sheet; put pan in oven until butter is completely melted.
8. Remove pan from oven and spread coated nuts in the butter, keeping them in a single layer.
9. Bake for 30 minutes, stirring every 10 minutes, until nuts are covered with a light brown coating.
10. Cool and store in covered container.
