This recipe was created by my 13 yr old son. I cannot vouch for the flavor as I have yet to try it but I told him I would post the recipe for others in hopes to encourage him to keep being creative in the kitchen. It mixes a little breakfast with lunch. NOTE: We used a bolillo for this recipe but I could not add that into the ingredients, you could really use any type of bread, even a croissant if you wanted.
Ingredients:
1/2 teaspoon cinnamon sugar
1 pinch pepper
1 pinch salt
4 thick slab bacon, cut in halves
2 slices of lunch meat, turkey meat
1 submarine sandwich bread
1/4 cup shredded cheddar cheese
2 eggs, scrambled
maple syrup (optional)
Directions:
1. Scramble eggs and add the cinnamon sugar on top of the eggs once they are cooked.
2. Cook the bacon but not crisp, once cooled cut slices in half.
3. Slice the bolillo or sub sandwich loaf lengthwise.
4. Place the lunch meat on the bottom portion of the bolillo or sub sandwich loaf, then add the egg and then the bacon strips. Sprinkle the pinch of salt and pepper on top.
5. Top off with the shredded cheese.
6. Optional step - drizzle syrup.
7. Finish the sandwich by adding the top of the bolillo or sub sandwich loaf.
